Yum
I must apologize for the photo, I really need to learn how to take good food photos...
This was our yummy dinner a few nights ago and I need to keep this recipe, so I decided to record it here! Albert got the recipe from a co-worker, but I changed it so much that I know I will not remember how to make this again if it isn't on record.
Ingredients:
2 chicken breasts (large)
3.5 c water
1 med onion chopped
3c white grape juice
2T dried basil
2 quarts (about 2 large cans) diced tomatoes
1 c milk
2 c whipping cream
2 large handfuls of leafy greens (I used spinach and arugala)
salt and pepper to taste
Parmasean cheese to sprinkle on top
Instructions: Sautee onion in a small amount of butter or veg. oil until clear. Add water and chicken and boil until chicken is cooked. Remove chicken to chop. While chopping add grape juice and dried basil. Simmer until volume is nearly halved. Re-introduce chicken and add the tomatoes. Brind back to simmer. Add milk and cream, bring back to simmer. Add leafy greens, salt and pepper, sprinkle with cheese and enjoy!
I am luck enough to still have jars of tomatoes from our garden, but I think it would still be good with store bought, you may want to add a bit of lemon juice though.
